Why we love it
This exceptional Recioto della Valpolicella Classico is obtained from the best hand-picked, organically grown grapes sourced from the prestigious Valpolicella Classico area, the heart of the historic appellation.
After harvest, the grapes are carefully placed in small crates to prevent damage and undergo a natural drying process (appassimento) for 100 to 200 days, depending on the vintage. This slow dehydration concentrates the sugars and flavours essential for this luscious dessert wine.
Once the optimal sugar level is achieved, the grapes are gently pressed. The wine is then aged for a minimum of 12 months in wooden barrels, followed by an additional 12 months in temperature-controlled stainless steel tanks on its own lees to enhance complexity and texture. It is further refined with 12 months of bottle ageing.
The result is a rich and elegant Recioto della Valpolicella, offering a complex bouquet dominated by notes of ripe cherry and red fruits. On the palate, it is warm and sweet with refreshing acidity and velvety tannins, achieving perfect balance and structure.
Traditionally enjoyed as a passito dessert wine, Recioto della Valpolicella pairs beautifully with chocolate-based desserts, blue or lightly aged cheeses, or savoured on its own as a meditative wine. A true expression of Valpolicella’s winemaking heritage, intensely flavourful, harmonious, and indulgent.
The artisan who made it
Il Canovino is a family winery, is husband and wine, Antonio and Francesca and their vineyards, cultivated following organic practices in the Valpolicella and Soave area. The vineyards in the Valpolicella, in the Canova area are located at 200/250 m. above sea level and the Soave vineyards in the heart of the Soave Classico area.
Il Canovino is four generations of vine growers and wine making, it is the place where tradition and modern equipment find their perfect balance, where grapes are looked after because great wines are made on the vine not in the winery. Il Canovino is slow made wines, they follow the natural time and wines are released only when they are ready, there is no rush, only by following each and every wine, a great wine can be made.

An excellent wine, fruity, perfect for chocolate desserts. Not overly sweet, this wine also work well with cheeses. Delicious
