Why we love it
Incantabiss is a lambrusco obtained from the lambrusco Ruberti grapes trained using the guyot method, a method not used in the plain because it reduces the yield by a good 50%, but it goes by itself that the lower the yield, the better the quality.
The Ruberti grape is a native Mantovana variety and it is, among the varieties of lambrusco, one of the most appreciated for its softness and uniqueness.
Lambrusco Incantabiss is Franco and Mario’s masterpiece, like the name says, a wine that astonishes, "incanta" in Italian, a wine with a beautiful ruby red colour with purple reflections, with a lively foam. On the nose, the wine is mineral and with red fruit aromas, strawberry in particular, intense, soft.
The lambrusco Incantabiss is excellent with cold cuts, chicken, grilled meat, grilled fish, risotto.
Lambrusco Incantabiss should be served at 14 - 15 degrees and let it breathe for a few minutes before pouring it to really appreciate its quality.
The artisan who made it
We have known Franco and Mario for a few years now, we came across them in a blind tasting of Lambrusco and fell in love with theirs. We rung and arranged to see their farm, their vineyards, and it was like we have known each other for ever.
They introduced themselves as being farmers before being winemakers, they have the utmost care for their vineyards and orchards, they work tirelessly, they consider themselves part of the nature, their environment, so everything is done keeping that well in mind.
Their winery, Fondo Bozzole, is located in the in the Oltre Po Mantovano, in the only Lambrusco DOC appellation outside Emilia Romagna. With a very small production, the winery is run just by them, each wine is unique and special, each wine is a drinking experience.
