Tonda Iblea is a Sicilian olive variety native of the Monti Iblei in southeastern Sicily, a region renowned for producing some of the island’s finest olive oils. The unique terroir, dominated by limestone soils from ancient marine sediments, is poor in nutrients but rich in minerals, encouraging olive trees to develop concentrated and complex flavors. Combined with a sunny Mediterranean climate and cooling sea breezes, this environment is perfect for Tonda Iblea, prized for its distinctive aromas of fresh tomato and herbs and its balanced, vibrant character.

The olives are hand harvested and cold pressed within hours in a state of the art mill, resulting in an award-winning organic extra virgin olive oil. This low to medium fruity oil offers delicate notes of fresh grass, tomato, and almond, with a gentle spiciness and a sweet, persistent finish.

This Tonda Iblea organic EVOO is ideal for drizzling over salads, grilled vegetables, and fish dishes, bringing a touch of elegance and enhancing the natural flavors of your meals.

The artisan who made it

At the heart of Cassaro, a small village perched among the scenic Monti Iblei in Sicily, lies Cunzatillu, a farm born from a shared dream to revive and celebrate the region’s olive growing heritage through organic cultivation. What started as an idea among three young siblings – Francesca, Sebastiano and Eva – has grown into a courageous project rooted in love for their land, the traditions of Sicilian farming, and a commitment to quality that reflects the spirit of their home.

The olive trees under their care are scattered across limestone-rich terraces overlooking the valley of the river Anapo, where centuries-old groves and newer plantings thrive side by side. Here, in an area where the landscape itself seems to whisper stories of ancient cultivation, the family tends every tree by hand, embracing the rugged beauty and challenges of “heroic” olive growing – a term Sicilian growers use for the hard-won care of olives on steep, terraced land. Their organic cultivation methods respect the natural balance of the land, preserving biodiversity and enhancing the character of their organic oil.

Cunzatillu was created not merely to produce organic oil, but to honour a cultural legacy and safeguard the agricultural identity of this corner of eastern Sicily. The family’s work is a blend of devotion, resilience and respect for their territory, and every grove reflects their deep connection to the culture and terrain of the Monti Iblei.
