The region of Apulia is another big Italian olive oil producer, it is often referred as the Italian mill and this DOP extra virgin olive oil is obtained from local manually harvested olive varieties from very old olive trees located in the Gargano natural park, un uncontaminated and untouched area in the north of Apulia, and immediately cold pressed in a state of the art mill. This is a fantastic DOP extra virgin olive oil with very low acidity, rich in polyphenols, medium fruitiness and a marked peppery aftertaste.
This DOP extra virgin olive should be used raw, to add the final touch to any dish, from salads to risotto, from soups to red meat or just enjoyed on some bruschetta
but it is most suited in richer dishes with strong and bold flavours.
